Classic “All American” Meatloaf

    Preheat oven to 350°F.

    Finely chop carrot , celery , onion , red bell pepper , and white mushrooms .

    Mince garlic .

    In a large bowl , combine ground chuck (80% lean) , plain bread crumbs , egg , Worcestershire sauce , Italian herbs , olive oil , salt , black pepper , and cayenne pepper .

    Add the chopped carrot, celery, onion, bell pepper, mushrooms, and minced garlic to the bowl.

    Mix everything with your hands until just combined.

    Place the meatloaf mixture into a loaf pan .

    In a small bowl , combine brown sugar , ketchup , and Dijon mustard for the glaze.

    Add hot sauce to taste to the glaze.

    Spread the glaze evenly over the meatloaf.
